Pepper pork stew
Ingredients
1 lb. of cubed pork (shoulder or chopped)
1 onion, chopped
3 bell peppers (variety of colours), chopped
2 jalapeño peppers
2 cups of chicken stock
2 tbsp. of paprika
4 tbsp. of tomato paste
Cooking fat (coconut oil or lard)
Salt & pepper to taste
In a large pot add cooking fat, chopped onion, salt & pepper
Over medium heat sweat onions until translucent
Add in chopped bell peppers, jalapenos and cubed pork. Sautee ingredients until peppers are limp.
In a bowl or large measuring cup, add chicken stock, paprika and tomato paste, and stir until combined
Add chicken stock combo to pot of meat and peppers
Turn stew down to low to simmer, cover with lid, and let simmer for 2-3 hours until pork is fall apart tender.
Serve!
Note: If the stew is too watery, add more tomato paste to thicken.
