Lemon Loaf


  • 1-1/2 cups of almond flour

  • 1/4 cup of tapioca flour

  • 1/4 cup of coconut oil

  • 1/4 cup of fresh squeezed lemon juice (approx. 1-2 lemons)

  • 1/4 cup of honey or maple syrup

  • 3 eggs

  • 1 tsp. of alcohol-free vanilla extract

  • 1 tsp. of aluminum-free baking powder

  • 1/4 tsp. of salt

  • Zest from 1 large lemon


  1. Pre-heat over to 350

  2. Mix together honey, eggs, coconut oil, lemon juice and vanilla extract

  3. Stir in almond flour, tapioca flour, baking soda and salt to wet mixture until combined

  4. Pour batter into a 9x5 loaf pan

  5. Bake for 40-50 min. until centre bounces back

  6. Let cool and enjoy!
