VEGAN CAESAR DRESSING
1 cup of raw unsalted cashews
Juice from 1 lemon
2 tbsp. of coconut aminos
1 tsp of sriracha
1-2 cloves of garlic
1/2 tbsp. of Dijon mustard or mustard powder
1/2 cup of olive oil
Salt & Pepper to taste
Add cashews to 2 cups of water and soak for 1-2 hours
Strain soaked cashews
Add all ingredients to a blender and top with 1/2 cup of water and blend until creamy. If too thick, add more water or olive oil and blend.
Store in fridge for up to 3 months.
Note: Can we enjoyed as a salad dressing or a dip.
