Paleo Ginger Molasses cookies
Ingredients
1 egg
1/3 cup of coconut sugar
1/4 cup of coconut oil (melted)
1/4 cup of almond butter
1/4 cup of molasses
1 tsp. of vanilla
1 cup of almond flour
1/3 cup of coconut flour
1/2 tsp. of baking soda (aluminum-free)
1 tsp. of cinnamon
1 tsp. of ginger powder
1/4 tsp. of cloves
1/4 tsp. of salt
Pre-heat oven to 350
Combine egg, coconut sugar, almond butter, coconut oil, molasses and vanilla
Add in dry ingredients: almond flour, coconut flour, baking soda, cinnamon, ginger and salt
Mix till wet and dry ingredients are combined
Refrigerate dough for 15-20 minutes
Once dough is chilled, roll dough into approx. 1 inch balls
Place on cookie sheet and flatted with hand
Bake for 10-12 minutes
Let cool completely before eating (or burn your tongue!)
