Paleo Ginger Molasses cookies

Ginger Molasses cookies

Ingredients

  • 1 egg

  • 1/3 cup of coconut sugar

  • 1/4 cup of coconut oil (melted)

  • 1/4 cup of almond butter

  • 1/4 cup of molasses

  • 1 tsp. of vanilla

  • 1 cup of almond flour

  • 1/3 cup of coconut flour

  • 1/2 tsp. of baking soda (aluminum-free)

  • 1 tsp. of cinnamon

  • 1 tsp. of ginger powder

  • 1/4 tsp. of cloves

  • 1/4 tsp. of salt


  1. Pre-heat oven to 350

  2. Combine egg, coconut sugar, almond butter, coconut oil, molasses and vanilla

  3. Add in dry ingredients: almond flour, coconut flour, baking soda, cinnamon, ginger and salt

  4. Mix till wet and dry ingredients are combined

  5. Refrigerate dough for 15-20 minutes

  6. Once dough is chilled, roll dough into approx. 1 inch balls

  7. Place on cookie sheet and flatted with hand

  8. Bake for 10-12 minutes

  9. Let cool completely before eating (or burn your tongue!)
