Gingerbread Pancakes


Ingredients

  • 1 ripe banana

  • 1-1/2 cups of almond flour

  • 3 eggs

  • 1 tsp. of vanilla

  • 1 tbsp. of molasses

  • 1 tsp. of baking soda (aluminum-free)

  • 1/2 tsp. of ginger powder

  • 1/2 tsp. of cinnamon

  • 1/8 tsp. of nutmeg

  • 1/8 tsp. of cloves

  • Avocado or Coconut Oil for cooking


  1. Mash ripe banana in a bowl

  2. Add in eggs, vanilla and molasses and whisk together

  3. While whisking add almond flour, baking soda, ginger, cinnamon, nutmeg and cloves

  4. Pre-heat a skillet/frying pan with cooking oil (medium to medium low)

  5. Portion batter unto skillet/frying pan - cook on one side for approx. 2-3 minutes and flip

  6. Enjoy with maple syrup or naked (the pancakes naked, but hey if you want you can eat them while you are naked!)
