Gingerbread Loaf


Ingredients

  • 2-1/4 cup of gluten-free rolled oats (ground into a flour)

  • 1 cup of pumpkin puree (not pumpkin pie mix)

  • 1/2 cup of maple syrup or monk fruit

  • 1/4 cup of organic molasses

  • 2 eggs

  • 4 tbsp. of coconut oil (melted)

  • 1 tsp. of baking powder (aluminum-free)

  • 1/2 tsp. of baking soda (aluminum-free)

  • 1/2 tsp. of salt

  • 1 tsp. of cinnamon

  • 1 tsp. of ginger powder

  • 1/4 tsp. of cloves

  • 1/4 tsp. of nutmeg


  1. Pre-heat oven to 350

  2. Add oats to a food processor and blend until fine

  3. Whisk together eggs, pumpkin, maple syrup, coconut oil & molasses

  4. Add dry ingredients (oats, baking powder, baking soda, salt, cinnamon, ginger, cloves and nutmeg) to wet mixture

  5. Once mixture is combined add to a 9”x 5” loaf pan

  6. Bake for 45 minutes to 1 hour or until cooked all the way through

  7. Let cool for 10 minutes and transfer to a cooling rack

  8. Slice loaf and enjoy!
