Gingerbread Loaf
Ingredients
2-1/4 cup of gluten-free rolled oats (ground into a flour)
1 cup of pumpkin puree (not pumpkin pie mix)
1/2 cup of maple syrup or monk fruit
1/4 cup of organic molasses
2 eggs
4 tbsp. of coconut oil (melted)
1 tsp. of baking powder (aluminum-free)
1/2 tsp. of baking soda (aluminum-free)
1/2 tsp. of salt
1 tsp. of cinnamon
1 tsp. of ginger powder
1/4 tsp. of cloves
1/4 tsp. of nutmeg
Pre-heat oven to 350
Add oats to a food processor and blend until fine
Whisk together eggs, pumpkin, maple syrup, coconut oil & molasses
Add dry ingredients (oats, baking powder, baking soda, salt, cinnamon, ginger, cloves and nutmeg) to wet mixture
Once mixture is combined add to a 9”x 5” loaf pan
Bake for 45 minutes to 1 hour or until cooked all the way through
Let cool for 10 minutes and transfer to a cooling rack
Slice loaf and enjoy!
