TULSI TOMATO SOUP


Ingredients

  • 5 large tomatoes

  • 1 large carrot

  • 1 large onion

  • 2-3 cloves of garlic

  • 1/3 cup tomato paste

  • 4 cups of vegetable stock

  • 3 tbsp. of tulsi

  • Salt & pepper to taste

  • Cooking oil


  1. Chop carrots & onions, and mince garlic

  2. Add cooking oil, carrots, onion and garlic to a large pot and sauté at medium heat until tender

  3. Chop tomatoes and add to pot along with tomato paste, salt, pepper, tulsi and vegetable stock

  4. Reduce to simmer and let cook for 30 minutes covered

  5. Puree soup in a blender or with a hand mixer until smooth or desired consistency

  6. Enjoy or let cool and store away for later.

Note: Stores in fridge for up to 1 week or in freezer for up to 3 months.
