SAUSAGE STUFFING
2 gluten-free Hot Italian sausage, with casing removed
1 medium onion, chopped
2 medium apples, chopped
2 cloves of garlic, minced
1 cup of whole cranberries, fresh or frozen
1 tbsp. of sage
1 tbsp. of thyme
1 tsp. of rosemary
Splash of apple cider vinegar
Salt & Pepper to taste
Avocado oil, for cooking
Pre-heat large frying pan with oil on medium heat.
Add in onion, salt & pepper. Cook until onion is translucent.
Add in sausage, apple, garlic, sage, thyme, rosemary and apple cider vinegar. Stir to combine.
Cook until sausage is cooked through ( approx. 5-7 minutes)
Add in cranberries and sauté for another 5 minutes until cranberries start to loose their shape.
Let cool and serve as a side or stuff into your favourite poultry!
