ITALIAN STIR-FRY
2 gluten-free Hot Italian sausage
1 medium red onion, chopped
1 green pepper, chopped
1 large tomato, chopped
1 small zucchini, chopped
1 clove of garlic, minced
1 tbsp. of dried oregano
1/4 tsp. of red pepper flakes
Splash of red wine vinegar
Salt & Pepper to taste
Olive oil, for cooking
Cook sausages and let cool about 15 minutes or until easy to handle.
Pre-heat large frying pan with oil on medium heat.
Add in onion, pepper, salt & pepper. Cook until onion is translucent.
Add in garlic, oregano and red pepper flakes. Stir to combine.
Turn up heat to high, add chopped tomatoes and red wine vinegar. Cook until all the water evaporates.
Chop sausage into bite size pieces, add to frying pan with zucchini.
Cook for another 5-10 minutes or until zucchini is al dente.
