Cranberry-orange cookies
Ingredients
2 cups of cashew flour
3 tbsp. of monk fruit
1/2 tsp. of baking soda (aluminum-free)
1/4 tsp. of salt
1 egg
2 tbsp. of coconut oil (melted)
1 -2 tsp. of orange zest
1/4 cup of cranberries
Pre-heat oven to 325 degrees
Combin e cashew flour, monk fruit, baking soda and salt
Add egg and melted coconut oil to dry mixture, and stir until combined
Zest 1-2 tsp. of orange rind into the mixture, and add cranberries — stir to combine
Place dough in refrigerator for 20 minutes
Form 1 inch balls from dough and place on cookie sheet, and press flat
Bake for 16-18 minutes
Let cool and enjoy with your favourite herbal tea
