Cranberry-Orange Cookies

Ingredients

  • 2 cups of cashew flour

  • 3 tbsp. of monk fruit

  • 1/2 tsp. of baking soda (aluminum-free)

  • 1/4 tsp. of salt

  • 1 egg

  • 2 tbsp. of coconut oil (melted)

  • 1 -2 tsp. of orange zest

  • 1/4 cup of cranberries


  1. Pre-heat oven to 325 degrees

  2. Combin e cashew flour, monk fruit, baking soda and salt

  3. Add egg and melted coconut oil to dry mixture, and stir until combined

  4. Zest 1-2 tsp. of orange rind into the mixture, and add cranberries — stir to combine

  5. Place dough in refrigerator for 20 minutes

  6. Form 1 inch balls from dough and place on cookie sheet, and press flat

  7. Bake for 16-18 minutes

  8. Let cool and enjoy with your favourite herbal tea
